Paryse Lambert, owner and operator of the Full of Crepe Food Truck which has enthralled Jax residents with their decadent authentic French crepes for more than two years, is preparing to open a brick and mortar location.
Full of Crepe is a tough name to top but I believe Paryse has done just that with
“The Stuffed Beaver”
Beavers like water so if you’re going to name your Jacksonville business The Stuffed Beaver there is no better place than Riverside.
Lambert has signed a lease for a ground floor space at 2544 Oak Street, home of the former Judson’s Restaurant in the Delgado Building, built in 1919.
The Stuffed Beaver will continue to serve the best crepes by a damn site to be found anywhere in the city.
They will also offer Parisian style sandwiches, salads and French Canadian Poutine; French fries and cheese curds topped with a light brown gravy.
Keeping with their beaver theme and French Canadian roots they will offer Beaver Tails; fried dough pastries, individually hand stretched to resemble a beaver’s tail. The Beaver Tail can be customized with a variety of toppings so you get just the tail you crave.
